These little baskets will look great on a children's festive table, kids will definitely enjoy them. If you are unsure about mushrooms in the recipe, they can easily be replaced, for example with chicken meat.
For the baskets:
Potatoes
2.11 lbs
Cheese
2.82 oz (any hard type)
Butter
3.53 oz
Eggs
4 units (yolks)
Salt
Black Pepper
ground
For the filling:
Mushrooms
7.05 oz
Sausage
3.53 oz (ham)
Onion
1 unit
Sunflower Oil
for frying
To prepare potato mushroom baskets, first peel the potatoes, cut them into cubes and boil with some salt.
While the potatoes are boiling, prepare the filling for the potato baskets. Finely chop the mushrooms and fry them in vegetable oil. Add diced ham and onion to the mushrooms. Season with salt, pepper, and sauté everything together. Then set aside to cool.
Drain the water from the cooked potatoes, add egg yolks, butter, and finely grated cheese. Beat everything thoroughly using a blender.
Using a culinary syringe, squeeze the mashed potatoes into basket shapes on prepared parchment paper. Brush the baskets with egg yolk.
Place the baskets in the oven (temperature 350 degrees Fahrenheit). Once they turn golden brown, remove them, fill with the mushroom mixture and sprinkle with cheese. Place back in the oven for 15 minutes.
Serve potato mushroom baskets hot, garnished with herbs.
