This recipe uses a part of pork carcass called pork belly (side or belly). It is meat with a layer of fat, obtained from the abdominal muscles. It results in a very tasty and aromatic roll, and when combined with buckwheat, it makes a wonderful main dish that can be served, for example, at a family celebration.

Buckwheat Groats

3 pcs (boiled)

4-5 cloves

1/2 tsp (ground)

1/2 tsp (dried)
To prepare the pork belly roll with buckwheat, start by cooking the buckwheat porridge in the usual way (water to buckwheat ratio 2:1). Wash and dry the meat (pat dry with paper towels). Crush garlic, salt, and other spices in a mortar and rub the meat with the mixture.
You can change the set of spices according to your taste. For example, you can use ready-made Abkhazian adjika (3 tbsp)
Now, lightly pound the meat. It is more convenient to do this by placing it in a plastic bag or wrapping it in plastic wrap.
Then roll up the meat and secure it with a strong thread. I placed boiled chicken eggs inside the roll, they look beautiful when sliced, but you can make the roll without eggs.
Place the roll in a suitable baking dish, cover with a lid (if there is no lid, you can use double-layered foil) and bake in the oven at a temperature of 200 degrees Fahrenheit for about 2 hours.
To check if the meat is ready, pierce it with a thin knife to the middle. If clear juice appears on the surface, the roll is ready.
After this time, remove the pork roll from the oven, remove the cover, and transfer the roll to a plate. In the dish where the roll was baked, sprinkle the buckwheat, mix it well with the remaining juice and fat. Then place the roll on top of the buckwheat. Brush it with honey mustard sauce and place it back in the oven until browned for about 20-30 minutes (do not cover with a lid!)
Instead of the sauce, you can use mustard, egg, a mixture of water and honey in equal parts, olive oil, etc.
