A recipe for delicious and beautiful cookies with a surprise inside! The meringue on top is crispy, while the inside is soft and tender. You can fill the cookies with 'Toffifee' candies, chocolate chunks, candy bars, or something similar. Nuts can also be added. Either way, they will be very tasty!
For the dough:
Flour
1 1/4 cups
Butter
7 tbsp
Sugar
1/4 cup
Egg
1 (yolk)
Salt
a pinch
Water
1 tbsp (cold)
For the meringue:
Egg
3 (whites)
Lemon juice
1 tsp
Sugar
3/4 cup
Candies

To prepare Fairy Kiss Cookies, pour flour, sugar, and salt into the blender bowl. Add cubed butter.
Turn on the blender and in just a few seconds, you'll get a mixture resembling coarse crumbs.
Add the egg yolk, water, and blend - the mixture should come together into a ball (it all happens very quickly).
Form the dough (do not knead for too long), wrap it in plastic wrap, and chill in the refrigerator for half an hour.
Roll out the dough into a sheet about 5 mm thick and cut out circles (stars, squares, etc.) slightly larger than the diameter of the candies. Place the circles on a baking sheet lined with parchment paper, and place a candy on top of each.
Add lemon juice to the egg whites and beat until soft peaks form. Then gradually add sugar while continuing to beat. Beat the egg whites until stiff peaks form.
Using a pastry bag (or a plastic bag with a corner cut off), pipe the meringue to cover the candy from all sides.
Bake the Fairy Kiss Cookies in a preheated oven at 180 degrees Fahrenheit for 15-20 minutes. Serve with hot tea and enjoy!
