To prepare the honey cake "Medovik", first make the cream, it needs to be prepared in advance. Place the milk on the stove. Then mix the butter (it should be soft) and sugar.
In a separate bowl, mix the starch, flour, and sugar. When the milk boils, gradually add the dry ingredients, mix and let it cool. Stir the mixture periodically while cooling.
Gradually add the butter with sugar to the cooled mixture, gently mix with a spoon.
Do not use a mixer as the butter will foam up. The cream may form small lumps, which is not desirable but not a big issue.
Make the layers for the honey cake. Sift the flour in advance before preparing the mixture for the layers. Mix margarine, honey, and sugar over low heat. In a separate bowl, lightly beat the eggs and add the baking soda. Add the eggs with soda to the margarine, honey, and sugar and mix well.
Remove from heat and quickly add the flour. Knead a thick and elastic dough.
Bake the layers. Divide the dough into approximately 8-9 small balls. Roll out the layers thinly (about 2 mm) and place them in a form. Dust the pan with flour each time.
Spread cream on each layer as soon as it's ready.
You can leave the last layer for sprinkling. Let it cool, break into pieces, and crush in a blender.
Decorate the honey cake "Medovik" with chocolate and kiwi (feel free to get creative or simply use sprinkles).
