Sometimes kids refuse to eat cottage cheese or cheesecakes despite their parents' persuasions. Don't convince them, make them muffins, they are delicious, quick, and not at all like cottage cheese or cheesecakes. In fact, that's what they are, they turn out soft, very tasty, and contain no flour, an excellent recipe for a children's breakfast and more.

Cottage Cheese
1 cup
Eggs
2 pcs
Kefir
1/2 cup
Sugar
1/3 cup
Baking Powder
1 1/4 tsp
Semolina
1/3 cup
Butter
1/4 cup (melted)
Salt
pinch
Orange Juice
2 tbsp
Orange Zest
1/2 tsp
To prepare flourless cottage cheese muffins, place cottage cheese, kefir, eggs, sugar, salt, melted butter, vanilla extract, orange juice, and orange zest in a bowl. Use a mixer or immersion blender to mix everything until smooth.
If you don't have an orange, you can omit the last two ingredients.
Then add semolina and baking powder. Leave the batter for about 20 minutes so the semolina swells, this is necessary, if you skip this step, the semolina will be felt as small grains in the finished batter and the batter will not be thick enough.
It's very convenient to bake these muffins in a silicone mold. You can also bake them in a regular muffin tin, using paper liners to prevent sticking.
Pour the batter into the molds, slightly underfilling them, as the batter will rise a bit.
Place the muffins in a preheated oven at 180 degrees Fahrenheit for 20-25 minutes, check for doneness with a wooden skewer.
Let the muffins cool slightly and remove them from the molds. Be careful, they are very soft.
