My whole family and I really love caviar made according to this recipe. Recipe is designed for 7 jars of 0.5 liters each. I almost always end up with 6 jars, as the rest of the caviar is eaten by family members during the cooking process... It turns out very delicious!
Zucchinis
12 cups (clean weight)
Sunflower Oil
1 cup (200 ml)
Onion
4 cups
Tomato Paste
2 cups ("Chumak")
Mayonnaise
180 g (1 small tube)
Sugar
1/2 cup
Salt
2 tbsp
To prepare zucchini caviar, wash zucchinis, peel, and remove the seeds. Grate them coarsely and let sit for 30 minutes. Do not drain the juice.
Pour sunflower oil into a saucepan (cast iron or with a thick bottom), heat it well, add zucchinis and stew them for 30 minutes.
Then add fried onions, tomato paste, mayonnaise, and sugar. Mix everything and stew for 2-3 hours over low heat, stirring occasionally (it is preferable to use a splitter).
For those who like it spicy, you can add 2-3 heads of chopped garlic 15 minutes before it's done (I personally prefer it without).
Pour the ready zucchini caviar into sterilized jars and seal with pasteurized lids. Flip them over and wrap until completely cooled.
