Recipe for fluffy pancakes made without flour. These semolina-oat pancakes are made in an American style - quite thick, airy, and very filling. And no one will ever guess there's oatmeal in them...
Oat Flakes
1 cup
Semolina
1 cup
Kefir
2 cups
Eggs
3
Sugar
2 tbsp
Baking Soda
1/2 tsp
Salt
1/2 tsp
Sunflower Oil
3 tbsp
To make semolina-oat pancakes, grind oat flakes in a blender and combine with semolina.
You can leave the oat flakes whole, depending on your preference.
Pour in kefir, mix, cover with plastic wrap, and refrigerate overnight.
In the morning, lightly beat eggs and add them to our mixture. Add salt, sugar, oil, and baking soda. Mix everything together to get a batter of medium thickness.
On a well-heated skillet greased with oil, bake the pancakes. Make the pancakes small so they are easier to flip; they turn out quite delicate.
Fry on both sides until golden brown and serve the semolina-oat pancakes with your favorite jam or sour cream.
