Recipe for this roll is very simple. The roll is light, airy, simply melts in your mouth and looks fabulous. It's best to use green apples, not too sweet (e.g. Antonovka). They add a bit of tartness to the filling, which pairs perfectly with the sweetness of the roll.
For the meringue:
Eggs
3 (whites)
Sugar
2/3 cup
Powdered sugar
for sprinkling
For the filling:
Apples
3-4
Sugar
1-2 tbsp
Strawberries
1 1/2 cups
To prepare the meringue roll with apples and strawberries, halve the apples, remove the core, and bake until soft in the oven (you can also use a microwave). Then scoop out the flesh with a spoon, add sugar, mix well. Cool down and refrigerate.
Whisk the egg whites until stiff peaks form, add sugar, and continue whisking until very thick.
Spread the mixture on a baking sheet lined with parchment paper. Shape it into a 20x30 cm rectangle.
Bake in the oven at 170 degrees Fahrenheit for 20 minutes. Remove the baked meringue, place it on a board to cool down without removing the parchment paper.
Sprinkle the cooled meringue with powdered sugar, place a baking sheet on top, and flip it over. Carefully peel off the paper on which the roll was baked.
Spread the surface with cold applesauce.
Place sliced strawberries on top.
Carefully roll up the meringue using the paper. Pull the paper upwards and towards you, the roll should easily come together.
Alternatively, instead of a roll, you can make two-layer pastries by cutting the baked meringue in half.
