Another recipe for a beautiful and delicious appetizer. These spicy liver rolls will take a worthy place on a festive table. Liver rolls taste like a liver cake, but they are served differently. They don't need to be pre-cut and arranged on plates, you just need to take them and eat.
For the Pancakes
Beef Liver
1.1 lbs
Eggs
5 pcs
Flour
2/3 cup
Milk
1/2 cup
Salt
to taste
Black Pepper
to taste
For the Filling
Carrots
1.3 lbs
Garlic
3 - 4 cloves
Tomatoes
7 oz
Parsley
Basil
To prepare liver rolls, remove the film from the liver, cut it into small pieces, run it through a meat grinder, add eggs, flour, salt, milk, and mix well. The dough should not be thick.
It's easier to remove the film from the liver by wetting your fingers with salt or soaking the liver in hot water for 1 minute.
Bake thin pancakes on a small skillet, greasing it with a piece of butter or margarine.
For the filling, julienne the carrots, dice the tomatoes. Fry the vegetables in vegetable oil until tender, add herbs and garlic at the end. Mix and let cool.
The filling can be different: Korean-style carrots, cheese salad with garlic and mayonnaise...
Place the filling on the edge of each pancake and roll it up, stack them in a pile on a plate and refrigerate for two hours.
Cut each roll into 4 pieces and serve the Liver Rolls with mayonnaise or sour cream.
