Recipe of this sauce has Spanish roots, it is a bright and very tasty sauce that goes well with almost everything. In the classic version, white bread is added to the sauce to thicken it and get a pureed structure. I don't do this, firstly, it tastes better to me, secondly, it is healthier and less caloric, and thirdly, bread shortens the shelf life of the sauce. To prepare Romesco sauce, sweet peppers, onion, garlic, and tomatoes need to be baked in the oven under the grill. Line a baking sheet with parchment paper and arrange the vegetables, drizzle with a little olive oil and a pinch of salt on top, place in the oven for about 20 minutes.
