Probably one of the most popular soups. The recipe is not complicated and quick, as well as hearty. Just what you need when you have very little time to cook. By the way, you can prepare the meatballs in advance and store them in the freezer, which will further speed up the soup preparation time. My family loves cheese soup with meatballs, the recipe of which I offer.
Ground Meat
1-1.5 lbs (beef)

Carrot

To prepare the cheese soup with meatballs, place the ground meat in a bowl, season with salt and pepper to taste, add the egg, grated half of an onion, and mix well. Form small balls - meatballs - from the meat.
Pour water (12 cups) into a pot and bring to a boil. Add the meatballs to the boiling water, as well as black peppercorns and bay leaves. Remove any foam that forms during boiling.
Then add diced potatoes to the pot and cook for 15-20 minutes.
Prepare the sauté. Finely chop the onion, grate the carrot on a medium grater. Sauté the prepared vegetables in vegetable oil until soft. Add the sauté to the soup.
Add diced cheese to the soup, stirring constantly to ensure the cheese melts evenly.
Be sure to use good quality cheese, as it affects the taste of the soup.
Season the cheese soup with meatballs with salt to taste, add herbs, let it simmer for a bit longer, and then turn off the heat. The flavorful and delicious soup is ready!
