First, prepare the rice for making homemade meatballs with gravy. The rice doesn't need to be cooked for the filling. Rinse the rice several times with cold water, then pour boiling water over it for 30-40 minutes. Drain the excess water.
By not cooking the rice, the meatballs will hold together well. While they are simmering, the substances from the rice will additionally bind the filling.
Cut the meat into small pieces and pass it through a meat grinder together with the onion and garlic.
Add rice, egg, salt, and pepper to the meat. Mix everything thoroughly.
Shape the mixture into meatballs. Do this with wet hands to prevent the mixture from sticking. Shape the meatballs into small balls and coat them with flour.
Fry the meatballs on both sides and arrange them in a deep skillet or pot.
Prepare the gravy for the homemade meatballs. Pour a little oil into the skillet and sauté grated carrots and thinly sliced onions until golden brown.
Then add flour and tomato paste, mix well and sauté for another three minutes.
Next, add water, sour cream, spices, and herbs. Bring to a boil.
Pour the prepared gravy over the meatballs. Carefully move the meatballs with a spoon (lift them slightly) to allow the gravy to flow to the bottom and cover all the meatballs. Cover the pot with a lid and simmer the meatballs for 30-35 minutes.
Serve homemade meatballs with gravy with a side dish (such as mashed potatoes in my case). Enjoy your meal!
