A very quick and easy recipe for a kefir cake that will take you literally 5 minutes to prepare. The rest of the time, you will just wait for your beauty to bake. It has a very soft and moist texture, and by adding orange or lemon zest, as well as candied fruits or nuts (you choose) you will get a truly festive and very delicious cake. 


 

Eggs
3 large
Kefir (2.5% fat)
1 cup
Neutral-tasting vegetable oil
1/2 cup
Vanilla (vanilla sugar)
Flour
1 1/2 cups
Salt
1/2 tsp
Sugar
1/2 cup
Baking powder
1 1/2 tsp
Candied fruits
1/2 cup
Raisins
1/4 cup
To prepare the kefir cake, first preheat the oven to 170 degrees Fahrenheit with top-bottom heat and convection mode. And prepare the baking pan right away. I use a rectangular pan measuring 8 x 4 inches with a height of 2.5 inches. Simply line the pan with parchment paper of a suitable size.
I always use silicone-coated parchment paper, no need to grease it additionally. If you have regular parchment paper, grease it with vegetable or butter.
Next, mix the liquid ingredients in one container: eggs, kefir, vegetable oil, and vanilla. Mix everything with a fork or whisk.
In another container, mix the dry ingredients: sifted flour with baking powder and salt, sugar. Mix well.
Mix the dry ingredients with the liquid ones and add candied fruits and raisins. Mix well.
I rinsed the raisins with water beforehand and dried them with a paper towel.
Spread the batter in the pan and place it in the preheated oven for 40-45 minutes.
Check the cake for doneness with a wooden skewer. Insert the skewer in the middle of the cake, remove it, if it's dry - the cake is ready, if not, bake it a little longer. Enjoy your aromatic kefir cake with a nice cup of tea!
