Cucumbers prepared according to this recipe acquire a special grape flavor. They can be served on their own, as well as being great in salads. The leaves are also ready to eat, they can be stuffed or added to salads, for example. They go well with rice.
For a 1-liter jar
Cucumbers
2 cups
For the brine (per 1 liter of water)
Grape juice
1 1/4 cups
Sugar
1/4 cup
Salt
1/4 cup
To preserve cucumbers in grape leaves, scald the cucumbers with boiling water, then rinse them with cold water after 1-2 minutes. Wrap each cucumber in a grape leaf and tightly pack them into a jar.
Prepare the brine: add grape juice to water, bring to a boil, add salt and sugar. Pour the brine over the cucumbers. Leave for 3-5 minutes, drain the brine, then bring it to a boil again. Repeat this process three times. On the fourth time, pour the brine and immediately seal the jar. The canned cucumbers in grape leaves are ready.
These preserved leaves can be used to make dolma.
