Very tasty slightly spicy eggplants, prepare a salad according to this recipe, it will be a great snack in the winter. It also goes well with any side dish.

To prepare eggplant with garlic and sweet peppers, finely chop the hot pepper, garlic, and cut the sweet pepper into strips.
If you like spicier dishes, you can increase the amount of hot pepper.
Cut the eggplants into small cubes (I used a vegetable cutter) or dice (0.79 inches x 0.79 inches) and boil them in 21 cups of water with added salt. Cook the eggplants until soft, but be careful not to overcook them.
You can check the readiness of the eggplants with a match - if it easily pierces through, they are ready.
Meanwhile, in a separate large pot, pour oil and simmer the sweet peppers in it for 5-8 min. Add the cooked eggplants, hot pepper, garlic, and vinegar here.
