I already have a recipe for milk pancakes, today I am baking these American pancakes on kefir (which can be replaced with buttermilk or yogurt). Both options are good, but with kefir, pancakes turn out a little more fluffy. You can add fresh berries to the batter (currants, blueberries, cherries), it turns out very tasty.

Flour
1 1/4 cups
Baking Powder
1 1/2 tsp
Baking Soda
1/4 tsp
Salt
a pinch
Sugar
2 tbsp
Kefir
1 cup
Eggs
2 pieces
Butter
2 tbsp
To make kefir pancakes, mix all dry ingredients in a bowl: flour, baking powder, salt, sugar, baking soda. Gently whisk together. In another bowl, combine kefir and eggs, just mix them slightly. Now pour the liquid ingredients into the dry ingredients and mix until smooth.
Lastly, add melted butter and mix everything again.
Take a good non-stick skillet, place it over medium heat and when it is well heated, spoon the batter onto it. I spooned about 3-4 tbsp. Do not make the pancakes too big, they will be difficult to flip. After 1-2 minutes, the pancake will start to puff up and bubble, flip it to the other side and cook for another 1-2 minutes.
Fluffy and golden kefir pancakes are ready. Serve them with jam, preserves, honey, maple syrup... and enjoy!
