Mayonnaise

Garlic
4 cloves
Mustard

To make eggplant and tomato roll-ups, cut the tomatoes into small slices. Cut the eggplants into thin slices lengthwise. Sprinkle them with salt and let them sit for about 20 minutes, then drain the liquid that forms. Then, fry the eggplants on both sides until golden brown and let them cool.
Spread a mixture of mayonnaise, minced garlic, chopped herbs, and mustard on each slice. Place a tomato slice on top and roll up. The eggplant and tomato roll-ups are ready!
