For this recipe, you will need fillet of white fish (hake, pangasius, pollock). I used pangasius fillet. The fish is cooked together with the sauce. The vegetables release all their juices, combined with spices, and topped with aromatic cheese. The fish turns out tender, juicy, and amazingly delicious!

about 2 cups (1 fillet of pangasius)
Carrots

To prepare baked fish with vegetables and cheese, wash and dry the thawed fish fillet with paper towel. To prevent the fish from sticking to the baking dish, grease it with oil, sprinkle with coarse salt, and layer with thinly sliced carrots.
I used a vegetable peeler to slice the carrots. Greasing the carrots prevents the fish from sticking.
Layer the fish on top of the carrots, top it with finely chopped onions, sprinkle with pepper and coriander.
Then add sweet peppers sliced into long strips and chopped garlic on top of the fish.
Prepare the tomatoes for the baked fish with vegetables and cheese. Remove a bit of the tomato skin and grate the tomato using a coarse grater with the cut side. This way, we grate the pulp, and the skin remains in our hands.
Next, add chopped herbs on the fish, followed by grated tomatoes on top. Season with salt, sugar, paprika, and a bit of hot pepper.
Sugar is needed to balance the acidity of the tomatoes.
Place the prepared fish in the oven for 30-40 minutes at 180 degrees Fahrenheit. Five minutes before it's done, sprinkle the fish with grated cheese.
Once the baked fish with vegetables and cheese is ready, let it cool slightly. Serve it garnished with herbs, portioned.
