This dish is pure pleasure and benefit. I fell in love with this soup from the first spoonful! Delicious, the recipe is not complicated, quick to make, and the taste is excellent. And it's so healthy! Lentils contain 26% protein and that's not all its virtues, be sure to make this lentil soup. You can use any type of lentils. A very beautiful soup is made from red lentils.

Lentils
1.5 cups
Meat Broth
6 cups (chicken)
Tomatoes
3 pcs
Tomato Juice
1/2 cup
Garlic
2 cloves
Onion
1 pc
Sweet Pepper
1 pc
Olive Oil
1 tbsp
Butter
1 tbsp
Salt
to taste
Black Pepper
to taste, ground
Cayenne Pepper
1/5 tsp, ground red
Parsley
To prepare Lentil Puree Soup, chop the garlic, finely chop the onion, and sweet pepper.
In a saucepan, heat olive oil and add the garlic, sauté for just a few seconds, then add the butter. Once it melts, add the vegetables and sauté until translucent.
Add the lentils and sauté them slightly with the vegetables.
Then pour in the broth and cook until the lentils are soft.
My lentils cooked for 25 minutes, it depends on the type of lentils (red lentils cook faster).
Make a cross-shaped incision on the tomatoes, dip them in boiling water for a few seconds. Peel off the skin, chop the flesh. Blend the tomatoes with tomato juice.
You can use canned tomatoes in their own juice.
Once the lentils are soft, add the tomatoes and cook for another 10-15 minutes.
The lentils should be soft but not turn into mush.
Use a blender to puree the lentil soup, but not for too long to keep some texture.
Lentil Puree Soup garnish with herbs, a few drops of olive oil, and chili flakes (optional) before serving.
