Recipe for a light and nutritious soup. Beet cream soup has a delicate thick consistency with a light coriander aroma. A very healthy soup, the recipe is suitable for those who follow a healthy diet or observe fasting. For extra flavor, the soup can be garnished with pieces of boiled chicken and croutons.
Beets
10.58 oz (cooked)
Milk
0.85 cups (oat)
Vegetable Broth
0.85 cups (or water)
Garlic
2 cloves
Olive Oil
2 tbsp (or sesame)
Coriander
1 tsp
Salt
to taste
Black Pepper
ground, to taste
To prepare beet cream soup, finely chop the garlic, crush the coriander in a mortar. Fry the garlic and coriander in olive oil for about half a minute.
Then pour in the broth, add diced beets, and pour in oat milk. Simmer for 8-10 minutes until the soup slightly thickens.
Using a blender, puree the soup until smooth, season with salt and pepper to taste, and bring to a boil again.
Beet cream soup is served hot, garnished with herbs.
