The eggplant season has begun, so here is another recipe for a hearty and delicious appetizer. What makes it hearty is the paste made from walnuts. There is something Georgian about this dish - eggplants, walnuts, garlic, cilantro... but let's not argue about which cuisine this dish belongs to, the most important thing is that it's delicious! Enjoy!

Eggs

Nut Paste:
Walnuts
1 cup
Water
1/2 cup
Natural Yogurt
1/2 cup
Garlic
4-5 cloves
Cilantro
1 bunch
Onion
1/4 onion
Lemon Juice
2 tbsp
Salt
1-1.5 tsp
Khmeli Suneli
1/2 tsp
Uccho Suneli
1/2 tsp
Ground Coriander
1/2 tsp
Vegetable Oil
for frying
To prepare eggplant slices with nut paste, wash and slice the eggplants into slices about 1/4 inch thick.
Do not slice the eggplants too thick, as it will be difficult to fold them later.
Place the sliced eggplants in cold salted water (1 quart of water - 1 tsp salt) so that the water completely covers them. Press them down with a lid to submerge and leave for 30 minutes.
Meanwhile, prepare the nut paste. For this, you will need a food processor. Place all ingredients in the bowl and blend. Do not add all the water at once, if the paste is too thick, add more water as needed.
The paste should be thick but not too runny.
Be sure to taste it, you may need to adjust salt or acidity to your liking.
Remove the eggplants from the water, pat them dry with paper towels, and place them in a container for easy mixing. Lightly beat 2 eggs and pour the egg mixture over the eggplants. Stir and let sit for 10-15 minutes.
Fry the eggplants in vegetable oil. Since the eggplants are in an egg mixture, they will not absorb too much oil.
Place a teaspoon of nut paste on each fried eggplant slice and fold it in half.
You can garnish the eggplant slices with nut paste with herbs and pomegranate seeds. If you don't have pomegranate seeds, you can use red currants for decoration. They provide the same tangy flavor as pomegranate, resulting in a beautiful and tasty dish. Enjoy your meal!
