Quick recipe for pastries made with thin dough. The dough is prepared quickly and turns out crunchy and slightly flaky. You can use any filling you like - potatoes, cheese with herbs, vegetables, etc.
For the dough:

The dough for crunchy oven-baked pastries is easy and quick to make. Take a bowl, pour in warm water, add salt, sugar, and sunflower oil, mix. Then add flour and knead the dough first in the bowl, and then on the table. The dough should be soft and elastic.
Wrap the dough in parchment paper and place it in a saucepan. I preheated the saucepan with boiling water to keep it warm. Cover with a lid and let the dough rest for about 20 minutes.
Next, divide the dough into equal pieces weighing 50-60 g, I ended up with 14 pieces. Roll each part into a ball and cover all with plastic wrap.
Take a ball of dough, roll it out into an oval shape, the dough should be thin and transparent. Spread the filling on top.
I made the filling in a very simple way. I sautéed mushrooms separately in butter. Then I stewed cabbage, onions, and carrots until soft (diced onions, grated carrots, finely chopped cabbage). I stewed them in a small amount of vegetable oil with water added so the cabbage doesn't burn and cooks evenly. Add salt and spices to taste. Combined mushrooms and cabbage, mixed - the filling is ready!
Wrap the dough at the edges to prevent the filling from leaking out and roll it up into a tube.
Place the pastries on a baking sheet lined with parchment paper. Brush the tops with a little beaten egg yolk and sprinkle with sesame seeds or any other seeds.
I didn't have sesame seeds, so I used chia seeds.
Bake the pastries in an oven preheated to 400 degrees Fahrenheit for 30-35 minutes until they turn a beautiful golden color. Crunchy oven-baked pastries are ready!
