Recipe for a delicate sauce with a spicy flavor. The spiciness and unique taste of this sauce are given by pistachios and, of course, wine. This sauce pairs well with grilled fish and chicken.
Leeks
2 inches (green part)
Pistachios
2 tbsp
Wine
1/2 cup (white)
Heavy Cream
1 cup (22% fat)
Unsalted Butter
3 tbsp
Black Pepper
to taste
To prepare the creamy pistachio sauce, melt the butter over low heat, add sliced leeks and simmer for about 2 minutes.
Add chopped pistachios and wine. Increase the heat and reduce the wine by half.
Then add the cream and simmer the sauce for a few minutes until it thickens, stirring constantly.
Creamy pistachio sauce is removed from the heat, add a little pepper and salt. Sauce is ready!
Before adding salt, taste the sauce as the pistachios are salty, so you may not need salt.
