Recipe for a moderately fatty, healthy soup. Turkey meat, usually fried, baked, or stewed, but wings are very good for broth. It turns out to be very tasty, clear, and low in calories, which is important for people watching their weight and health.
Turkey meat
1.5-1.75 lb (wings)
Rice
1 cup
Onion
2 medium
Carrots
2 medium
Potatoes
4 medium
Butter
3 tbsp
Salt
to taste
Black pepper
to taste
Parsley
To prepare turkey and rice soup, cover the meat with cold water, bring to a boil, and remove the foam. Then simmer over low heat for about 20 minutes.
Peel and finely chop the onion and carrots, sauté in butter without browning. Add the sautéed onion, carrots, and rinsed rice to the boiling broth. Bring to a boil and add cubed potatoes.
Simmer the soup over medium heat for 25 minutes. Then remove the meat, cut it into pieces, and return it to the pot.
Simmer for another 10 minutes, sprinkle with finely chopped parsley, season with salt and pepper.
You can add a little lemon juice to make the soup taste brighter.
