A true Ukrainian borscht is a hearty broth with lots of vegetables, tasty and healthy! A very delicious first course, however, it takes quite a while to prepare. A recipe for canned borscht dressing will definitely come in handy for you not only in winter. With ready-made dressing, you can cook borscht twice as fast, since you don't have to peel, chop, and then fry the majority of the vegetables. This amount of ingredients yields around 12-13 quarts of dressing, enough for the whole winter!
Tomatoes
26 cups
Onions
16 cups
Beets
16 cups
Bell Pepper
16 cups
Carrots
16 cups
For the dressing:
Sunflower oil
2 1/2 cups
Vinegar
1 cup
Salt
4 tbsp
Sugar
2 cups
Water
1 cup
To make borscht dressing for winter, first thoroughly wash the vegetables. Cut the tomatoes into cubes.
Remove the seeds from the bell pepper and cut it into strips.
Peel and grate the carrots with a large grater.
Also peel and grate the beets using a large grater.
Cut the onion into half rings.
Prepare the dressing separately. Combine the dressing ingredients, bring to a boil, and let it cool.
Place the prepared vegetables in a large convenient container, add the dressing, and cook, stirring, for 30-40 minutes.
Pack the ready borscht dressing for winter into sterile jars and seal them.
