A recipe of a Belarusian dish. Dumplings are less known than hash browns or potato pancakes, but equally delicious. These are nothing but potato cutlets with a meat filling. I suggest making a simplified version of dumplings. It takes very little time to prepare this dish, and even inexperienced cooks can handle it.
Potatoes
2.2 lbs
Minced Meat
10-14 oz (pork)
Onion
2 pcs.
Eggs
2 pcs.
Flour
0.4 cups
Salt
to taste
Black Pepper
ground, to taste
Garlic
1 clove (optional)
Sunflower Oil
for frying
To prepare lazy dumplings, peel and grate the potatoes with onion (1 pc.), drain excess water, add eggs, flour, salt, and mix everything well.
Grate potatoes with onion, alternating between potato and onion. Mix the mixture each time - so the potatoes won't darken.
Add grated onion (1 pc.), salt, and pepper to the minced meat. You can add a minced garlic clove (optional). Mix well.
Place the minced meat on the potatoes, mix everything thoroughly.
Scoop up the mixture with a spoon and place small flatbreads in a preheated skillet with oil. Fry like pancakes on both sides until golden brown and crispy.
Pour sour cream over lazy dumplings and serve immediately. Quick and very delicious!
